• Select avocados that are firm yet yield to gentle pressure. Avoid those with soft spots or discoloration, both signs that this tender fruit has been bruised.
• Speed ripening by placing the fruit in a paper bag and storing at room temperature.
• If making guacamole in advance, leave pits in the dip to prevent it from turning brown. Oxygen is the enemy, so seal tightly with a strong plastic wrap
