Yellow Squash Tips

• Yellow squash is also known as yellow crookneck because of its crooked neck. This too is a summer squash just like zucchini.
• Enjoy fresh summer squash during the winter. Prepare yourself now for fresh vegetables in the winter. First wash your squash and cut into circles or half moons. Then blanch for 3-4 min to break the enzymes down. Immediately cool with ice water. After squash is cool be sure to drain thoroughly. Finally you are ready to bag and vacuum seal. If you do not have a FoodSaver you can use Freezer bags. Be sure to get all the air out before freezing. Now you are ready to label, date, and place in freezer.
