Pasta Primavera vs Fettuccine Alfredo
By | May 24, 2009
• Pasta primavera is an Italian-American dish that consists of pasta and fresh vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. Generally the vegetables used are broccoli, carrots, peas, onions, bell peppers, mushrooms, zucchini, and tomatoes. Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common.
• Fettuccine alfredo is a pasta dish made from fettuccine pasta tossed with parmesan cheese and butter. As the cheese melts, it emulsifies the liquids to form a smooth and rich coating on the pasta. It was named by an Italian restaurateur, at his restaurant Alfredo alla Scrofa in Rome.
• These dishes tend to be similiar today. The differnce is pasta primavera offers vegetables and fettuccine alfredo is usually served with chicken. They both use the same sauce which consists of heavy cream and parmesan cheese.
